Sometimes I blog as a way to speak to myself...to help myself through situations that life brings my way. This is one of those times! Instead of dwelling on the bitter, lip puckering taste of a lemon (or in my case, someone I wish would leave me alone but won't) I shall dwell on the sweetness of lemon bars instead :)
Here is a simple lemon bar recipe:
- 2/3 cup Imperial spread, softened
- 2 1/2 cup sugar
- 2 1/3 cup flour
- 4 eggs
- 1/3 cup lemon juice
- 2 tbsp grated lemon peel
- Powdered sugar
Preheat oven to 350*.
Line 9x13 baking dish with no-stick foil.
